All of them!  I do like roses for their diverse color saturation and texture.

Using a more interesting container than clear glass with one kind of flower in mass.

I build flowers the day of and arrive as needed.

Most flowers are available all year, but out of season at a cost. 

Peonies roses  work well  for a out of season substitution.
